Injection Operator, Slicer, and Sausage Maker

As a Smokehouse Operator, Slicer, and Sausage Maker at Weaver Meat Processing, you’ll play a pivotal role in our production process, encompassing injecting, smoking, slicing, and creating flavorful sausages. Your expertise in operating smokehouse equipment, using meat band saws, and crafting delicious sausages through seasoning mixing will contribute to the quality and variety of our meat products.


Smokehouse Operation:

  •  Prepare meat products for smoking by injecting them with brine, following established recipes and guidelines.
  •  Hang the prepared products on smoke carts, ensuring proper arrangement for optimal smoking.
  •  Collaborate with the production team to schedule smoking cycles and ensure efficient use of smokehouse resources.
  •  Adhere to safety and sanitation standards to maintain a clean and hygienic work environment.

Slicing Product:

  •  After smoking, slice smoked products using a meat band saw or other cutting equipment, following precise instructions for thickness and presentation.
  • Inspect sliced products for consistency, quality, and appearance, making adjustments as necessary.
  • Maintain an organized slicing area, clean equipment, and follow sanitation protocols to prevent cross-contamination.
  • Collaborate with the packaging team to prioritize orders and ensure timely delivery of sliced products.

Sausage Making:

  •  Mix seasonings and ingredients into ground meat to create a variety of flavorful sausages, following established recipes.
  •  Collaborate with the production team to schedule sausage-making tasks and ensure accurate inventory tracking.
  •  Adhere to strict portion control and quality standards to deliver delicious and consistent sausage products.
  •  Follow food safety guidelines during sausage production, ensuring proper handling and storage of ingredients.

Quality Control:

  •  Monitor the quality of injected, smoked, sliced, and sausage products, addressing any defects or deviations from standards.
  • Follow quality control protocols to maintain product integrity and consistency.
  •  Contribute to continuous improvement efforts by providing feedback on product quality and production processes.


  • Previous experience in smokehouse operation, meat slicing, and sausage making is preferred but not required.
  • Knowledge of meat injection techniques, smoking procedures, and meat slicing using band saws is preferred but not required.
  • Familiarity with seasoning mixing for sausages and the operation of sausage stuffing equipment is preferred but not required.
  •  Detail-oriented with the ability to follow precise instructions for flavoring, smoking, slicing, and sausage making.
  •  Strong understanding of food safety and hygiene practices, with a commitment to maintaining a clean work environment is preferred but not required. Weaver Meat Processing will provide training.
  •  Ability to work in a fast-paced production setting, managing multiple tasks simultaneously.
  •  Excellent teamwork and communication skills to collaborate effectively with production and packaging teams.
  •  Physical stamina and dexterity to stand for extended periods, lift heavy objects, operate equipment, and handle sausage casings.

Note: Training will be provided for candidates who may not have experience in all aspects of the role but demonstrate a strong willingness to learn and an aptitude for the position.
